Zuni Cafe Chicken

I feel so exhausted today. Good thing dinner tonight involved very little prep work since most of it was done 2 days ago, but there was still a little kitchen drama. It was my first time cooking the Zuni Cafe Roast Chicken. Instead of cooking the bird in the oven, I decided to give it a try on my 2 burner outdoor gas grill. I turned both burners on and placed my cast iron pan to pre-heat. When the pan was hot enough I placed the chicken in. The problem was my cast iron wasn’t hot enough. A little of the skin got stuck and I was worry the rest of the chicken’s skin won’t crisp up as I hope it would. In the end everything came out good and delicious. Will be making this again.
