Cucumber and Wakame (Seaweed) Salad

INGREDIENTS
- 1/2 seedless cucumber, thinly slice
- 1/3 cup dried fueru wakame
- 1 ablespoon salt
- 3 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sugar
1. Place the thinly sliced cucumbers in a colander over a bowl. Sprinkle 1 tablespoon of salt on it and mix. Set it aside for at least 15 minutes but not over 30 minutes. Rinse the cucumbers under cold running water. Drain and squeeze out any excess water.
2. In a large bowl, soak the fueru wakame. Rinse the seaweed with cold water after it blooms. Drain well.
3. In a bowl mix the rice vinegar, soy sauce, and sugar together.
4. Pour half of the dressing on the cucumber and the other half on the seaweed. You can also mix the cucumber and the seaweed together and then pour the dressing.
