Japanese Spinach Salad

INGREDIENTS
- 8 ounce fresh spinach
- 1/4 cup dashi stock
- 1/2 tablespoon soy sauce
- 1 teaspoons mirin
- sesame seed
Remove the pan from the heat, stir in the vanilla, and set the pan in a bowl of ice and cold water, stirring the mixture every few minutes until it is thick and cold. In a small bowl beat the cream until it just holds stiff peaks and fold the coffee mixture into it gently but thoroughly. Spoon the mousse into 2 chilled long-stemmed glasses and chill it until ready to serve.
1. Before cooking the spinach set up a large bowl of icy water.
2. Boil a large pot of water and cook the spinach for about 2 minutes. Drain the spinach in a colander and submerge it in the bowl of ice water for a few minutes. Drain the spinach and squeeze out the excess water. Place the spinach in a mould lined with plastic wrap.
3. In a bowl make the sauce. Add the dashi stock, soy sauce, and mirin together. Mix well
4. Unmould the spinach onto a plate. Drizzle the sauce on top and sprinkle with sesame seed.
